Abstract

Roti merupakan makanan fermentasi berbahan dasar tepung terigu yang sering dikonsumsi masyarakat. Roti disebut sebagai produk fermentasi karena menggunakan ragi dalam pembentukan rasa dan aroma. Tujuan dari penulisan ini adalah untuk memberitahu prosedur pembuatan roti serta mengetahui konsentrasi ragi terhadap kualitas organoleptik roti. Pembuaan roti dilakukan dengan memberikan variasi penambahan ragi masing-masing 1%, 2%, 3%, 4% dan 5% kemudian dilakukan pengujian organoleptik pada msing-masing sampe. Berdasarkan hasil organoleptik, sampel A2 memiliki nilai tertinggi dari segi rasa, warna dan aroma, sementara sampel A5 memiliki nlai tertinggi dari segi tekstur. Semakin banyak ragi yang ditambahkan maka daya kembang adonan akan semakin besar. Berdasarkan hasil pengukuran tinggi adonan, adonan sampel dengan penambahan ragi 4% dan 5% memiliki tinggi adonan tertinggi setelah dipanggang, sementara sampel dengan penambahan ragi 1% memiliki tinggi adonan terendah. Kesimpulan dari praktikum ini adalah pembuatan roti dilakukan melalui enam tahap, yaitu pencampuran, peragian, pemeraman, pembentukan, proofing dan pemanggangan serta jumlah ragi yang ditambahkan akan mempengaruhi mutu organoleptik roti. Bread is a fermented food that often consumed by public. Bread is a fermentation product because it uses yeast for formation of taste and aroma. The purpose of this paper is to inform the procedure for making bread and to determine the concentration of yeast on the organoleptic quality of bread. Bread production is done by giving variations of yeast addition of 1%, 2%, 3%, 4% and 5% then organoleptic testing is carried out on each until. Based on organoleptic results, A2 sample has the highest value in terms of taste, color and aroma, while A5 sample has the highest value in terms of texture. The more yeast is added, the greater the power of the dough. Based on the results of the dough height measurement, the sample dough with the addition of 4% and 5% yeast had the highest dough height after baking, while the sample with 1% yeast addition had the lowest dough height. The conclusion of this practice is that bread making is done through six stages, namely mixing, fermentation, ripening, forming, proofing and roasting and the amount of yeast added will affect the quality of the organoleptic bread.
